Eats - Sweet Mustard Roasted Pumpkin Seeds



I large pumpkin gutted
Cleaned and dried pumpkin seeds
1/4 c butter
3-4 T dijon mustard
3 T brown sugar
1/2 t vanilla
1/2 t maple flavoring
salt

preheat oven 350 degrees


in a saucepan melt butter and ingredients over med-low heat stir in pumpkin seeds and cook for about 15 min or until the sauce starts to bubble and really attach to the seeds


spread seeds out on a baking dish and salt and bake for about 10 min.


pull out and stir seeds, add a little more salt and bake again for another 10 min. at this point keep an eye on them to make sure they don't burn. the sugar will burn quickly. these end up having a sweet smokey flavor that is to die for. and they are super crunchy. we loved them.

pumpkin seeds...ah that brought me back to the good old days...except it came with a twist ;)

Ohhh, those sound so yummy! Maybe if I ever get around to carving those pumpkins I bought for Halloween...
